It was a Sunday morning at Quiero Café Bar, day off for most people but when you are a bartender you normally don’t have time to rest. So I decided to try on new recipes and why not make one with beer.
The bar of Quiero café gave me lots of choices and among them I decide to use a Red Ale. The first think that came to my mind was passion. Red, fiery and spicy that’s what I had in my mind.
I choose rose syrup and puree of passion fruit by *MONIN. In order to balance the taste I put some lemon juice flavored with cinnamon, but I wanted more alcohol. I tried ouzo but it didn’t work out as it was covering all the flavors, then I tried tsipouro but again it didn’t gave me what I wanted, so I tried mastiha. It was exactly what I needed.
