Since my first article about pastry with beer, the ideas for tweaked recipes with beer started to overwhelm me. But everything on the right time and it’s time for lemons. I have thought to find a beer with intense aromas of citrus, “yellow” aromas and of course tastes, when Clausthaler Lemon appeared in front me. What was the result? The recipe that follows.
Ingredientsfor our recipe:
Pâte sablée Breton:
In the mixer bowl we mix the butter with the sugar until they get well combined. Continuously we add salt and we unite it with the rest. At the end we add the flour and the baking powder, by closing the mixer and then started rising speed slowly. We will have a pastry that will looks like crumbs, which will form into a ball. We wrap with cellophane and refrigerate for 30min. We butter a tart pan (size 28-30cm) and we cover with wax paper. Between two pieces of wax paper we roll the dough to 3mm thick, we put it into the tart pan along with some rise or beans for the weight (you don’t eat that rise or beans afterwards) and we bake for 14-15min at 170ο-180οC. We let it cool while at the same time we start preparing the lemon cream.
Let the Clausthaler be fizzled a bit and put together with the lemon juice, sugar and eggs in a bain marie. Homogenized, stirring constantly and withdraw when reached 82οC. Strain when reaches 45οC we add the butter and mix with a hand mixer (Beemer). Pour over the baked tart, let cool and enjoy.
Note 1: For the bain marie put a saucepan of water over medium heat and above that, a pan which will not be touching the water.
Note 2: We can make the base of the tart chocolate by changing 35-40g of flour with baking cocoa
Note 4: With the remaining pastry you can make cookies.
Note 3: You can also use crushed fleur de sel baked in lemon to give hint to the taste.
