On 29th of November in Food Issues premises, a “Greek Beer Tasting” took place. The tasting was organized by “Cooking and Tasting Seminars” and it was accompanied with dishes that have been through the pans and oven of the Chef Nikos Makrimihalos.
The pork shank, that the Chef prepared for the tasting, was excellent. All the participants were thrilled. The Chef Nikos Makrimihalos, after that decided to share his recipe with BeerBarteder.gr.
Ingredients for our recipe:
The recipe is for four people
Instead of stout beer we can use dark lager
We can use the following beers:
We can also serve it with sour cabbage
In a baking dish with a lid add vegetables and thyme. On top of the vegetables add the pork shank. We add salt, pepper and the beer. We close the lid and bake in a preheated 200oC oven for 2 ½ -3 hours.
Wash and peel the potatoes. Add salt and pepper and place in a baking dish, add the oil and bake for an hour in a preheated 160oC oven.
When the pork is done, place it on a rack to “rest”. Meanwhile we strain the juices of the sauce and in high temperature we boil until reduced by half. We check if more salt or pepper is needed.
We serve on a platter surrounded by the baby potatoes and pour the reduced sauce
