It’s that time of year. Most of North America celebrates Halloween and Thanksgiving. Halloween is the feast of All Hallows’ Day, of saints, martyrs and all the faithful departed believers who suffered during their life or death. A feast for the dead with a scary or mystical meaning, tricks or treats. Tradition has it to be the perfect day to communicate with the other realm. One of the most recognizable symbols of Halloween is a Jack-o’-Lantern, which is a carved pumpkin. According to the Irish legend these lanterns represent a peasant named Jack, who fooled the Devil into not taking him to Hell and with these lanterns he seeks a place on earth to rest his soul.
On the other hand of mysticism there is Thanksgiving. It is the “thank you”, believer’s address to Creator/God, for all things that, Mother Nature has offered during the previous year. This feast has nothing to do with the dead, but with life, the miracle of life in nature and the life that nature provides to mankind. In many places Thanksgiving is an expression of gratitude for a bountiful harvest and in others a celebration of survival through hard times.Both Halloween and Thanksgiving have a common element and that is the pumpkin. During the former pumpkin is dug, carved and decorated and during the latter it is baked into a delicious pumpkin pie.

Note 1: Since it’s not easy to find canned pumpkin in the Greek market you will have to use a whole pumpkin. Cut the pumpkin in half remove the seeds and the stringy fibers, slice the pumpkin, place the slices on parchment paper in a pan and bake at 180οC for 30-40 minutes or until your pumpkin is soft.. Remove from the oven, let them cool remove the peel and puree the rest. You can refrigerate the remaining pumpkin puree.
Note 2: Do not throw away the seeds. Remove the stringy fibers and place them in a 150οCoven for 10-20 minutes.
