As we mentioned before in relevant article, beer is not a stranger with pastry. Many times pastry chefs use instead of yeast other ingredients while beer has been used many times. Sometimes the beer is blond or others it can be black. When we mention black beer in cooking, in our mind we have those beers which are included in the Stout category, with strong aromas, taste of bitter chocolate and coffee. However we can also use and other beers like Porter, Dark Ale and Dark Lager.
For the coming recipe we suggest Stout beer. The duration of the recipe is 1 hour as is mentioned at the blog (My Recipes – Oi Syntages Mou) of the Chef Akis Petretzikis, who gave us his recipe and we thank him for that. The cost of the recipe is €4,00 and it’s for the whole family. It’s a very easy recipe, which will cost you about an hour from you time and a few more to consume it. We didn’t have any coffee beans, so we used some smashed bisquits.
Flour in cakes needs little mixing so as not to get tough during baking. Do not overbeat/overmix…
Heat the butter with the beer in a small pan until it melts. We add the cocoa and stir until it becomes a nice smooth mixture. We let it cool down. In a separate bowl we mix the flour, the soda and salt (the dry ingridients). Beat the eggs with the yoghurt. In the mixer, we pour the butter mixture and blend together. To this we add the flour mixture. Mix together with the mixer for a few seconds and continue mixing with a spatula until the mixture is smooth. Pour into the prepared pan and bake for 35min. Let it cool and then remove from pan.
If we want we can make a chocolate ganache. Break the chocolate in small pieces, heat the cream and melt the chocolate in the cream. Pour over the cake and sprinkle some coffee on top
